Hey snack lovers, for today’s Do it With Cate we’re going to be baking some Mickey Shaped Alfajor Cookies to jump start your day with a Sugar Rush. This Alfajor Cookie recipe is so simple even the worst wrecker can become a baker. It doesn’t require a lot of ingredients and the best part is that the baking time is so short, you’ll be able to enjoy them in less than 45 minutes! As always, we’re going to make these Argentinian deliciousness Disney style by using some Mickey Shaped cookie cutters.
Alfajor cookies are traditionally made with two small round cookies made out of wheat flour, that are joined together with some Dulce de Leche. This is the kind we’re going to make today. INGREDIENTS
80g or ⅓ cup butter
150g or ¾ cup sugar
280g or 2 cups flour
5g or 1 tsp vanilla essence
1 egg
Dulce de Leche / Nutella
Mickey Cookie Cutters
Baking sheet paper
Whisk (hand blender if you want to go Turbo)
OPTIONAL
Grated coconut
Food coloring

About 45 minutes
STEPS

The first thing you need to do is cream the butter with the sugar. Make sure that the butter is at room temperature so it’s easier to blend and start adding the sugar while you mix.

Now it’s time to add in the egg and the vanilla essence. You could always add a little bit of food coloring if you want to make them more fun. I’m just as much of a fan of pink as the next King Candy, but I went with Sonic blue first.

Next, add in the flour and mix until all the ingredients have incorporated properly and you get a dough. If you feel like your dough is too sticky, you can easily Fix-It Felix by adding more flour and mixing it with your ham hands. It should feel similar to Play-Doh.

Roll and extend your dough with a rolling pin (or a hammer if that works for you) as evenly as you can and make it about 1 mm in thickness. It is very important that you put a bit of flour on your baking sheet before you roll the dough and that it’s not too soft or you won’t be able to cut it.

Choose your favorite Mickey Cookie Cutter and start cutting your cookies. I got mine on Amazon but ShopDisney has great kitchen accessories. If you want to use different shapes, make pairs because, just as there’s no Felix without Sergeant Calhoun, you need two cookies to make an Alfajor. If you don’t have any cookie cutters you can always use a glass or a cup.

Put your cookies on your oven tray and bake for up to 15 minutes at 180-200°C / 360-390°F. I recommend you check your cookies after 8 minutes because mine were ready then at 180°C. When you take them out, they should be just a little bit medal golden on the edges, white on top, and mildly golden in the back. Alfajors are meant to be white and soft so make sure that you don’t overcook them or they’ll be so hard even Pac-Man won’t eat them.

This is the fun part! You need to spread your Dulce de Leche, Nutella, or cream of choice on the back of one cookie and then cover with the back of another cookie. The traditional Alfajor Cookie recipe calls for a little bit of grated coconut sprinkled on the edges, I skipped that part because I’m not a big fan, no cuts, no buts, no coconuts.
RESULT
These Mickey Shaped Alfajor Cookies are the perfect afternoon (or midnight) snack and I guarantee they’ll become your new obsession. Don’t forget to declare them when you leave your home game though!
